1. Please backup your database first as precaution.

1) If this is an employee added for testing purpose, you can delete the his checks from check list, then delete him from employee list.
2) If this employee left your company, you can edit the employee setup. On employee information screen, check the option box "inactive". So you will not see this employee from list when you add a new check.
