You can run ezCheckPrinting and click the top menu "Settings" to view account setup. Please update the "Company Information" part. Once you update the company name in this part, you will see the "Company Name" on your report changed.
2. Yes, ezCheckPrinting can print blank check to be filled in manually. Please check this link
